The Cognac appellation vineyard covers more than 78,000 hectares (10% of the French vineyard), divided into six crus. Cognac is made from a selection of white grape varieties, mainly Ugni blanc. Cognac is produced on a terroir that stretches between the Charente, Charente-Maritime and some communes in the Dordogne and Deux-Sèvres. The vines flourish on this terroir with its clay-limestone soil and mild, oceanic climate. Cognac is a brandy made from distilled and blended wines. The wines are made from white grape varieties with low sugar content and high acidity. The Ugniblanc grape is the most represented and covers 98% of the vineyard. It is completed by Colombard, Folle Blanche, Montils, Semillon and Folignan.

7 crus are identified: Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois and Bois Ordinaires.

The distillation of the wines is an important stage in the production of Cognac. It is the phase that transforms the wine into eau-de-vie through a double distillation operation. Once distillation is complete, the brandies are placed in oak barrels for a minimum of two years, often much longer. The cellar master supervises the production of the cognac and the selection of eaux-de-vie from different years and different crus for the blending phase.
