The quality of the wines in the Var depends on many factors: the terroir, the exposure, the grape varieties, the work of the vines, the vinification and the climatic particularities of each year. Each wine estate makes its own choice of grape varieties according to the regulations of its Protected Designation of Origin but also according to the properties of the soil and its geographical location. Although 200 grape varieties are authorised in France, the main ones used in the Var are Grenache, Mourvèdre, Cinsault, Tibouren and Syrah.
